I am not quite sure how to do cider tasting notes, but suffice to say that Eden Cider Guinevere’s Pearls Imperial Semi-Sweet Cider was a delicious tipple. Made from Northern Spy apples, it has great acidity, gentle mousse and a gorgeous aroma. Yum, and only 11% alcohol!

That is extremely high for cider. Apples generally don't exceed 12-13 % sugar, which would yield about 7-8% ABV.
Apple wine isn't radically different. It's essentially the same process, but requires more sugar. That extra sweetener ferments over a longer period of time and brings the alcohol content to around 12 to 14 percent, which is more likely to knock you back on your Honeycrisp if you drink a quantity of it.

Eden allowed the pressed juice to partially freeze, reducing the amount of water. They arrested the fermentation, rather than adding any sweetener or sweetened juice.
