I thought I would follow up with how things turned out for those who were kind of enough to make suggestions.

Unfortunately, the Jadot Burgundy 2005 for the pot was corked when I opened it. I had to find a back up bottle for the stew.

I had much better luck with the Jadot Pernand-Vergelesses de la Croux de Pierre 02. It was a very nice bottle and complemented the dish nicely. The dish itself is pretty robust and, for me, a big wine would have been too much. The 02 was just right, offering a contrast, still flavorful, but not over the top.

I served the dish with some home baked bread and egg noodles. By the end of the meal, the plates were wiped clean (no residual sauce) and the wine was gone. A success! Thanks for your help.
