I came across this too late for the September focus. 12.5% abv. Medium straw color with transparency. Attractive nose neither too grassy nor distinctly of citrus fruits. On the palate, rich, savory lingering. One of the better Sauvignon Blancs I've had in the past four or five months. Balanced, with the right amount of acidity to refresh the palate and invite further sips. Also, after having a series of wines at 14% or higher in alcohol, it was pleasing to have this one at 12.5 % feeling light and unobtrusive on the physical system. May be at its peak now. A near-perfect pairing with a broccoli souffle. I will have it tomorrow evening with spinach-phyllo pastry.
You seem to be describing probably 80% of what they produce in Sancerre and Pouilly-Fume. Your pairings sound nice, though goat cheese, hummus, olives and crackers would also be nice as an appetizer, but my favorite is gazpacho, it might be a little late but sauvignon make a perfect match for this cold tomato soup.
