You can improve your wine by using ultrasound w/ the new SonicDecanter:

I can hardly await for mine to arrive.

The web page claims that this decanter works by using ultrasound (an undisclosed proprietary frequency close to 40KHz) to facilitate the breakdown of various chemical compounds in the wine. SO2 is specifically mentioned.

A question for our chemists out there: can this work as they claim it does?

I am no chemist but I am deeply sceptical about the value of such brutal treatment. "Improvement" for some palates could be "spoiling" for others. I might be less sceptical if there were positive reports about the transformation brought about by the device from experienced and reliable wine drinkers and critics whom I trust.

The WashingtonPost weighs in:
WashPost:UltraSound

The UltraSound Decanter would probably heat the wine some, which might very well explain the "softening of the tannins" effect. Don't know.

Why is "smooth" the be all and end all of wine quality for these hucksters? What is wrong with a little acid and tannic structure?

If you want soft alcoholic fruit juice, just drink BV Coastal or La Vielle Ferme.

My system works better when I open a fine wine...lights down low, plenty of candles, Vivaldi Four Seasons in the background, and my partner in a sexy new outfit :D .
