WTN: Close Enough

Not quite roast beef, but a good chunk of ground chuck between two buns with slices of just-picked beefsteak from our garden was deemed close enough to warrant opening a bottle of 2001 Tertre Rôteboeuf St. Émilion Grand Cru Big, earthy and gamey--more like the animals themselves than the barn floor. Black cherry and tobacco nuances fill in the background, along with some spice. Great choice, but at peak--this won't improve from here.

Your experiences with 2001s are always more advanced than mine. Maybe time for a horizontal this winter.

I know, but though my cellar's cooled it's certainly not "glacially paced". Not surprised that mine come around a bit sooner.
