2010 Pierre Péters Champagne Grand Cru Cuvée Speciale Blanc de Blancs Les Chetillons - France, Champagne, Champagne Grand Cru (7/13/2018)
Bottle brought by a friend, and I got to finish the last glass tonight. When we initially opened it, the wine was effusively bready. It was like being in the proofing room of a pastry shop. On the palate there was the same doughy richness that was immediately cut by razor sharp acids. It was quite the contrast. Fast forward to Night two, and the doughy/bread aspects had calmed, but the acids were just as bright.

This needs time. Lots of time.
