Best white wine to go with chicken cacciatore

by pooja.saha » Wed Mar 20, 2019 7:23 am

I am making this Chicken Cacciatore next week for a small party. Can someone please suggest me a white wine which goes well with this dish?

That's a tough one. It really is a red wine dish (and even calls for red in the recipe). Is there a reason you need a white?

I might try a Ribolla Gialla based white. Maybe a Vermentino.

The version of cacciatore I make most often (chicken or rabbit) is supposed to be Tuscan and I usually serve a Tuscan red. But for a person who didn't like reds I once also served a Carricante from Etna, did fine.

Good call Dale. I was trying to come up with a more full bodied white.

Good recipe. All you need here is a white with the acidity to stand up to the acid in the ingredients. Most Italian whites have plenty of acid and almost any would be successful. One with more body than less would have the most success because it matches the body of the dish and that's the most important thing. I'd go with an Italian Arneis AND I'd use white wine, not red, in the dish.

Mature Xinomavro might work based on a 2008 tasted last night.
