2015 Weiser-Künstler Enkircher Ellergrub Riesling Kabinett - Germany, Mosel Saar Ruwer (4/7/2019)
Low alcohol (7.5%), bright acidity, salty minerality, and crunchy apple fruit, spritzed with lemon juice. This is classic kabinett, with moderate sweetness, and infinite drinkability.

Yes, indeed, I do appreciate that recommendation! :D But there's fat chance of finding it in France and two familiar German web sellers, Belvini and Lohrenbergs Gute Weine, do not list that grower :( .

I bet the winery would help you figure out where to get their stuff. Oh, and they also do a lovely feinherb that stays closer to the drier side.

I revisited 2015 kabinett tonight with the Falkenstein Krettnacher Euchariusberg #12. 8.5%, so not quite as light as your WK, but an elegant succulent feather (if it is possible to combine those elements in one wine) that danced across the tongue. It did very well with a mixed table of fried eggs, samosas, eggplant masala, rice, plantains, and salad. So so easy to drink!

The samosas and eggplant were purchased. Not sure the recipe for the latter is too difficult, but it was Friday and pouring rain and there is a nearby place that makes good Indian food!

Lobenberg has a package "2017 is the year of the Kabinett" containing 6 bottles. You might give it a try whether some of them meet your expectations.
