RCP: Fresh Spinach Salad

16 oz. Fresh baby spinach leaves, washed and drained
1 Smaller lemon, rind grated and lemon juiced
1/2 C Olive oil
3 T Fresh lemon juice
3 T Sour cream
1 Clove fresh garlic, crushed
1 t Fine sugar
1/2 t Salt
1/4 t Freshly ground black pepper
1/4 t Paprika

Place washed and drained spinach leaves in a large salad bowl ... grate the lemon rind and reserve ... then juice the lemon and reserve the juice ... in a blender, add the olive oil, lemon juice, sour cream, garlic, grated lemon rind, sugar, salt, pepper, and paprika and blend for 15 to 20 seconds ... pour blended dressing over the spinach, toss lightly, and serve ...

Makes 4 servings
