Does anyone here customarily make their own mayonnaise?

I only do it sometimes, but when I do I usually shoot for the Japanese style which differs from regular mayo by using only the egg yolks, which gives it a richer smoother character.

Nope. Not a mayo fan; use it very very very rarely.

Roughly once a month I get a free coupon for Kraft's Mayo. I always have about six jars on hand, even though I give away a lot. Who needs to make mayo?

I don't make mayonnaise, although I have in the past. Simply don't use enough to make it worth my while. I buy a good whole-egg mayonnaise at the supermarket and do with that.

I remember my mother's condensed-milk mayonnaise, made according to the recipe on the label of the tin. As soon as the weather got warm in springtime, she'd start making it, and it was a regular pantry item all through the hot weather until the end of summer. All the other mums made the same mayonnaise, so that's what all the kids I grew up with thought mayonnaise was.

Except the family with the French grandma, who made real mayonnaise at Christmas time. I used to spend Christmas-day evenings with them, being friendly with their daughters, and I have to admit that I thought their mayonnaise was strange and not nearly as nice as Ma's condensed-milk version. What you're used to sets the standard, I guess.

A few years back, I tracked down the recipe from the label, and made a batch of condensed-milk mayonnaise, to see if I still thought it tasted good. I didn't. It tasted awfully sweet and sickly to my adult taste-buds.

Never, no need to with the good ones available. I prefer Dukes Mayo for the better ingredients, but cannot get it around here. I actually use a mashed up avocado at times in place of mayo. Healthier, but I DO love mayo. I used to dip fresh summer tomatoes into it, fresh cooked asparagus and even potato chips. Do not do any of that anymore. Pity.

I didn't know that Kraft produces a real mayonnaise in addition to making Miracle Whip. I buy Hellman's.

I am surprised Bill gets mayo labeled Hellmans vs Best.
I have a slight preference for Dukes (vinegarier/tangier) but not worth searching for , considering how little we use.
I occasionally make aioli from scratch but usually cheat. Recently did few versions of bacalau, which is often served with saffron aioli, just put saffron threads in water/vinegar mix and then stirred into Hellman's with some grated garlic. And one of those times also did a similar "curry aioli"
Also have Kewpie in fridge for making spicy mayo (usually with chipotle in adobo)

Hellman's/Best is usually considered the best, but Kraft Mayo with olive oil is good enough for me when it's free. I might use a little on a tomato slice or when making deviled eggs or sandwiches, so it really doesn't make much difference. :P
