Btw, should add, that this Seattle cheese was identical to the one we bought in Santa Barbara. The one I ordered direct from Uplands? Didn't get around to opening it for a week, but when I did I found it overripe (sticky, orange colored) and ammoniated. Karen, what was your experience?
