I made these this morning. Excellent muffins. I used three organic farm eggs, unbleached white flour and buttermilk. Moist, lots of flavors, texture. Came out of the muffin tin easily without paper muffin cups. I spread a little local Ghee on cut side of the muffin. Mama Sattva Ghee made in Chico, CA.
