Roasted farmers market beet, spinach and goat cheese risotto. I was afraid that the red beets and green spinach might yield a brown dish, but happily the colors stayed fairly distinct.

Beet risotto is so fabulous! Great combination there. Had a barley version of beet risotto a few weeks ago at a superb Vancouver restaurant served underneath some pristeen chunks of pan-seared halibut--to die for.
