Whitefish caviar suggestions needed

Just processed 3# whitefish roe. Packed in 4 oz jars. What would you do with it ?
Closed a cottage in Michigan over the weekend and stopped at 2 commercial fisheries. Lovely whitefish, lake trout and walleye with smoked salmon, trout and whitefish as well as herring. Much easier and faster to process than sturgeon.
