RCP: Boxty

Boxty are Irish potato cakes. I once made a version that was utterly fantastic, then lost it. This morning, the recipe below showed up on Facebook and I recognize it to be the version that worked so beautifully long ago. So I'm posting it.


As one traditional rhyme explains:

Boxty on the griddle,
Boxty in the pan,
If you can't make boxty,
You'll never get your man.


RECIPE

Ingredients:
1 cup raw, grated potatoes
1 cup leftover mashed potatoes
1 cup all-purpose flour
2 tsp baking powder
2 tsp salt
2 eggs, lightly beaten
1/4 cup (about) milk to mix
Butter or oil for frying
Sugar (optional)

Method:

Place the grated raw potatoes in a clean cloth and twist to remove excess moisture.

Whisk together flour, salt, and baking powder. Combine flour mixture into raw potatoes, mashed potatoes, and eggs. Add enough milk to make a batter.

Heat a heavy skillet over medium heat and add butter or oil. Drop potato batter by the tablespoon into the hot pan. Brown on both sides (about 4 minutes per side to cook the egg).

Butter each boxty and serve hot with or without sugar.

Oh lookie. Came across another recipe that uses more milk to extend the Boxty into a potato crepe for rolling around a filling. Must try!


1 medium potato, peeled and grated, squeezed somewhat dry
1-1/2 cups fat-free milk
1 cup all-purpose flour
3/4 cup mashed potato (made with fat-free milk)
1/4 teaspoon salt
1/4 teaspoon pepper

The mashed potatoes don't belong in latkes. The rest is the same.
