It's official...

Today I am closing The Memphis Culinary Academy - after 22 years. Divesting myself of a bunch of accumulated debris and moving, with books (lots!), kitchen equipment, a small wine stash and a few pieces of treasured antiques to a small town in wine country near Portland, OR. (Those of you in the area be warned!)

I'm already setting up cooking classes in Portland and may be developing a restaurant in a nearby community as well.

This is the first Internet mention.

With both of you only two hours apart I figure there will be some kind of time-space warp problem out in the Pacific Northwest. Jenise, you might think about moving. There are already enough gas deposits out there.:lol:

Never too late to go through some ch-ch-changes, Chef!

Keeps you alive and kickin, instead of the alternative.

Whereabouts is this small town close to Portland?

I have folks up in Portland and the Salem area, so I'm up there fairly often. Plan on retiring in that area (the Willamette Valley) within a few years. What with global warming, I figure it will be warm and tropical there by then.

Who knows? Maybe later in the year, when my son returns from Iraq and is stationed at Ft. Lewis, I could go to the PNW to see him and we could all have some sort of get-together. 8)

Out by Amity, smackdab in the middle of wine country.

Come April I'll be doing a series of classes at store in Portland called "In Good Taste" So, anybody in the area...enroll early, they only take 16 people in each class.

Sounds great! And as long as nobody warns the folks at the Heathman, they'll never know what hit 'em.

BTW, I made the individual Wellingtons as per the recipe in Chef on Fire. They were wonderful. The recipe I used a few years back didn't include the foie gras, and that was a definite improvement. Great stuff!
