Watched another episode of the latest series of Chef's Table - the one where Vladimir Mukhin of White Rabbit in Moscow makes moose lip shchi - the look of 3 sets of moose lips coming at you is unsettling, but brief and the rest of it is very interesting - recreating a Russian cuisine that had a mandatory 70 year time out for the Soviet era.
