Quick pickling

It’s farm share season here, so I have lots of veggies to use up. I decided to try quick pickling some radishes, as I had more than any human could normally use. Last week I did a simple cider vinegar, salt and sugar, and that was pretty good, but not outstanding.

Today I tried rice vinegar, salt, sugar and some Kashmiri chili pepper. Oh my gosh! I started with radishes and some slices of zucchini. I ate the whole batch in no time. I have now added some freshly roasted purple beets to the liquid. We’ll see how that goes.

What an easy, perfect, summer dish!

Quick pickles are great, add an extra dimension to dishes. A case in point Tonight was steamed bau with garlic prawns, Hoi sin, spring onion and lightly pickled veggies specifically julienned carrot and celery pickled for about an hour in rice wine vinegar, sugar salt.

Barb, I so agree. As I told David on Facebook, my family's been making quick pickles all my life. We always called it salad, but same thing: vegetables with vinegar and salt. Other ingredients as needed.
