So what do you call things served in small glasses?

In restaurants, the French word "parfait" has been revived and pulled over from the dessert side of the menu for this kind of dish. I've not seen any other term, nor verrine, which is interesting. Is that an old word, or something new coined to capture vertical+terrine?

LA Times covered this in Wed food section this week. They do not offer an alternative name, using just the French Verrine.

I think it is a short-lived fad that doesn't call for an English name.

There are both starters and desserts that are served in small glasses that we call "verrines" in French. We're having some kind of opener like this tonight. What are these called in English (if there is a name for the serving style) and what recipes do you guys have?

I love this stuff, often Tequila-sunrise-style layering of mozzarella, sun-dried tomatoes, guacamole kind of filling, various veg mousse, dried fruits, etc.

They certainly look pretty with the layering, but they also look as it they would be difficult to eat out of, not like an 'oyster shooter' that you just slurp down.

But short-lived? Fad yes, but these are great, not to mention fun. (Fun to serve and eat; labor-intensive to make).

Seems like it's been around for a while in France.

That is gorgeous and quite artistic. Next time I entertain i will attempt to make something like this. I like it, too, because of the portion - you get so much flavor in a small serving - great to sip wine with. Not sure the generic American will enjoy something so small, though! LOL.
