What's for dinner?

by Cynthia Wenslow » Sun Mar 25, 2007 9:00 pm

I have dough rising for a pizza. It will have sweet red bell pepper, red onion, mushrooms, and extra cheese. I'm out of sausage and didn't feel like shopping this weekend.

That's sounds delicious (except for the pepper..LOL!) I love homemade pizza.

Tonight is grilled strip steaks with a Madeira mushroom cream sauce, brussel sprouts and baked (jacket) potatoes.

Tonight it is jumbo pasta shells stuffed with ground turkey, ricotta, parmesan, fresh herbs, and artichokes with Arrabbiata Sauce. I picked some arugula from my garden and made a simple salad with romaine, celery hearts and leaves, with a nice vinaigrette.

We're going with basic roasted chicken accompanied with an endive gratin from a Richard Olney recipe and mashed potatoes with chestnut puree.

Chicken and endive just went in the oven. Chestnut puree is done. It's cocktail time!

Here it was spicy honey-brushed chicken thighs on the grill, (from the latest "Cooking Light" magazine) with carrots and a green salad. All washed down with a 2005 D. Pedro De Soutomaior Albarino from Spain.

Tomorrow night will be one my own creations - Italian Sausage Spaghetti.

Dinner was going to be Lobster Mac & Cheese (a new recipe I wanted to try) but by dinner time neither of us was that hungry, and we just nibbled on some vegetables. It's on the menu tonight instead.

Dinner last night was Chicken Marsala w/ penne & peas in a butter sauce.

I've been experimenting with my sauce for this dish using beef broth & marsala wine instead of my regular chicken stock. I have to say...I really like the increase in flavor, though the color is a quite a bit darker.
