RCP: Halwa

This is the semolina pudding we made at the Indian class the other night. It is easy, good for you, and just plain yummy.

Stuart, I am counting on you to put another joke in here.

3/4 cup Semolina (you can use polenta or cream of wheat)
1/2 cup sugar (less if you like but I wouldn't do more)
2/3 cup water
2 Tbsp. Ghee, butter, or oil (ghee or butter will give you the best flavor)
6 green Cardamom pods, bruised
1/4 cup Raisins
1/2 cup sliced Almonds

1. Melt the ghee or butter in a skillet, add the semolina and cook 8-10 minutes over medium heat, stirring constantly, until semolina turns golden brown

2. Add sugar and water. Cook over low heat stirring occasionally, until sugar has dissolved.

3. Stir in the raisins and almonds.

4. Serve warm garnished with sliced almonds

Notes: If it sets too hard then add a little cream or more water to achieve the consistency you want. I like to eat this stuff as nuggets when it has been in the frige for a while.

No joke. I love halwah/halva/halavah.

Try this paired with dark-roast unsweetened coffee. I'll bet an old Madeira would work, too, in a different way.
