What did you cook out yesterday?

by Barb Freda » Thu Jul 05, 2007 9:30 am

Just want to hear...read Maria's post about ribs (and searched for her original request for help); now I want to try.

I did planked salmon. A big side of salmon, sprinkled it with a touch or turbinado sugar, a touch of paprika/chile powder and cayenne, then topped the whole thing with a big of cilantro lime butter that I had on hand...put it onto a hot grill, closed the lid and in about 10 min. it was done and delish. It was a huge hit. We really got a smoke flavor from where the wood had flamed/smoked (i sprinkled it one time with water to put out flame and make it smoke)...

What did you all do?

Caprese, of course (it's summer!). Pasillas stuffed with corn, onions, and cheese with a roasted tomatillo pipian sauce. Papardelle with morels. Strawberries with sabayon.

Our temps were up to 110° or so, and since I had an abundance of cukes from my garden, I decided to try a new cold cucumber soup, with vodka shrimp. I should have done a BBQ. We did not like the soup, it ended up being work intensive and all I could think about was nice juicy ribs or burgers. Next time I will follow my heart and not logical thinking.

Guests gnoshed on:
Marinated lox carpaccio with shiso leaf wrappers
Salt & Pepper Kettle Chips with onion-chive dip
Marinated olives and shrimp
Pistacios

Then dinner was served:
40 lbs of the best baby backs I've ever smoked
Ginger/porter/smoked paprika muy caliente BBQ sauce
XXX Adult Potato Salad
Watermelon, mint and onion salad
Asian cabbage salad
Curried artichoke, bamboo and rice salad

Then there a bunch of desserts that guests brought:
strawberry trifle
coconut cupcakes
baby cream puffs
bluberry cobbler
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

XXX Adult Potato Salad

Why does this make me think of something I posted a couple weeks ago?

I didn't get to cook anything outside. It was pouring rain.
