Burned me some pig this weekend

This has been one miserably wet summer in New England. But this 4th of July weekend has been one of the rare breaks in the rainy weather, and I took the opportunity to fire up the smoker and do some real Southern barbecue. The 6 lbs of Boston Butt had the dry rub applied on Saturay night, but rain in the morning and early afternoon on Sunday made that day a no-go. The weather cooperated today, though. I had to evict a family of wasps who had decided to build their nest under the tarp over the smoker (shows you how little chance I've had to use it this season), but after that I enjoyed hickory-smoked Carolinas-style pulled pork, both the fixin' and the eatin'.

That's a coincidence. I bbqd pork butt this past weekend, too. I took some nice pictures, but I guess I can't include them in a post - have to have them on a server, which I do not.

We shredded the pork, added a vinegar mop sauce, piled it on to some potato buns, and topped with cole slaw dressed with the same mop sauce. That meal is always a winner around here, and this time was no exception.

John, this got me thinking, and it occurs to me that we should be able to port over the image upload feature from the old forum. Just for the hell of it ...

Try this link and see if you can use it to get the necessary code to post into a forum message here.

As a slightly more complicated workaround, you could always visit the Louisville Restaurants Forum, which still runs on the old software, click NEW TOPIC to start a new post, use the IMAGE button there to upload your image, then copy the code and paste it in to your message entry form back here. But the link above should be simpler.

Don't say that in Eastern North Carolina....

I enjoyed my Q with a South Carolina-style mustard/vinegar sauce.

I was recently in Eastern North Carolina. After I had barbecue they ran me out of town on a rail. Oh to be back in Texas where they know what barbecue is.
