I have used the "hottub" method for cooking steaks for years. Hottubs are typically kept at 102° which works well for steaks, I don't have one so I use a cooler. You simply put the steak in a ziplock, submerge it into 100°+ water until the zip edge is at water level then zip it. This gets all the air out of the package and gives maximum contact to the steak. Let it soak for 1 hour, meanwhile get a grill very hot. After soaking one hour sear the meat for 90 seconds a side then rest for ten minutes. You'll end up with a perfect med rare steak from surface to surface without the grey to pink you normally see.
