I roasted sweet potatoes with Brussels sprouts and a pure maple syrup mixture last week.....double yum! Fall eating is a welcome treat right now.

I wouldn't go that far. I'm never happy to see the end of tomatoes and eggplant. But one consolation is the sweet sweet potatoes that are starting to show up. Plus my son loves them, so at least he'll eat something with vitamins during the winter!

Aren't there lots of things to eat in the winter for vitamins? All the winter squashes, swiss chard, kales, root veggies, winter tomatoes, cruciferous veggies, spinach, apples, pears, Asian pears, peas.

Yes, but my son is two years old! Vegetables are not his strong suit.

I've roasted sweet potatoes in a root vegetable medley. But, I've never roasted sweet potatoes and turnips together nor sweet potatoes and brussels sprouts. Going to do both very soon. :D

We've been doing a lot of oven roasts recently, just combining what we have at hand and drizzling with EVOO and salt before the heat treatment. So far, it's been potatoes, sweet potatoes, onion, green beans and kale in varying quantities, all courtesy of the CSA. Yes, Fall's OK. :D
