Believe it or not, I began bottling them- 990 cases of Cab, and hopefully tomorrow 400 cases of Zin.

First let's see how they develop in bottle. Anyone can make wine that tastes good straight from the tank. Some people can make wine that tastes good from the bottle. Fewer are able to make wine that develops over time in the bottle, one of my claims to fame. Will my new wines still do that? I am by no means certain.

Should have them for sale before Rosh Hashana. First I was hoping before Pesach, then I was hoping before Shavuos. Now I can categorically confirm before Rosh Hashana. Difficult to believe it only took me 5 months to convince the bosses to get their asses in gear to get the bottling supplies. If they taste good, I know I'll regret not being able to convince my boss to do the GAN EDEN partnership/operation with the wines. Still, I'd rather make the GAN EDEN making optimal decisions for maximising quality, rather than making the best wine I could with what was available to me. Still, I think and hope really good wine. Time will tell.

IMHO you should do Gan Eden like Hadju and and weiss bro's do their thing. You agua dulce was extraordinary and thats great! But I dont see why you cant make your own Gan Eden's as Shirah does their deal?
