We bought this wine at the domaine in '08 and heeded the advice to wait the compulsory 8 years. So tonight we served this with grilled corn, grilled fig and arugula salad, and grilled scallops. This was a match made in heaven. To experience a mature Huet '04 Le Mont Sec, Vouvray is a rare experience and this was very much on point. My daughter did most of the work and that made it even more special. I you have this wine, it is at the opening of its drinking window.

Interesting use of the word "mature", but it does sound like a great food match and a great meal.

2004 was not a blockbuster year but as these things go it will probably outlive many of us and be 'mature' for a long time to come. That said, I remember this particular wine fondly because I drank a bunch of it in 2005-06 and it really was a precise delight, even then.
