Blue Food??

Other than fruit, many people hold the opinion that food shouldn't be blue. They have even put blue food dye in mashed potatoes (zero effect on taste) and tasters insisted it didn't taste as good.

Saw a blue food on Iron Chef Gauntlet (OK, I am addicted) and one of the (failed) contestants included some pea flower in it. This turns deep blue when acidity hits it (it is light blue to start with.

The butterfly pea flower, also known as “Asian Pigeonwing,” is employed prominently in Malaysia to naturally color rice and cakes, and in Thailand, where it’s served as a syrupy welcome drink. It’s even sometimes consumed with citrus juice, in which case the high acidity turns the substance to a pink-purple.


Other than blue Curacao and berries I can't think of too many blue foods. Some even suggest putting a blue light bulb in the fridge or freezer to help those on diets. Anyone tried the pea flower trick?

They have achieved a level of acceptance (high in anthocyanins which are good for us) but are still looked on as a novelty item by most, I think.

I like making small new potatoes (usually with lots of butter, salt, and chopped parsley) with a mix of red, white and blue.

Plus they look like amethyst geodes when you cut them in half....(old rock hound talking here)

I also think 'amethyst geode' - another old rock hound here.

How about blue corn? I see tortilla chips made of them all the time.

Blue plums? I know, really kinda purply.

Jeff, I was going to go there too. Blue corn is widely accepted.

But a story: my grandmother had never heard about blue corn when I took her to a high end southwestern Mexican restaurant in Newport Beach. I ordered us both the blue corn plate--cheese enchilada, beef taco, etc., her favorites. But she couldn't eat it. The sight of the blue, her favorite color, on her plate as food turned her stomach. I had to order her another plate, no blue. Funny thing about her, when she said about anything, "I've never heard of that" it was death. I could introduce her to new things only by talking about them for months in advance. In this case, I failed to do that. Never occurred to me.

I feel the same way about pink food and recall, with embarrassment, sitting in front of a bowl of shocking pink borscht with the sour cream already stirred in, struggling to eat. Couldn't.

I don't think of blue potatoes as a novelty, they have a very unique flavor of their own, quite delicious. It's fun to buy them at Farmers Markets where they might be any one of several different varieties. There's not just one.

Never seen it sold fresh, like for corn on the cob, but dried yes for popcorn. And in flour form.

Funny story!

My mother told me that her class did the 'blue mashed potatoes' experiment when she was in high school. No one would touch them.

It struck me afterwards that in Woody Allen's movie "Sleeper" they also served a meal of, I believe it was, blue gruel. Mmmmmmmmm.....

One can envision a van Gogh inspired plate with purple mashed potatoes, beets and creamed corn and spinach etc.
About an even chance that Jenise actually has a set of palette plates stashed somewhere.
