WTN: Charité Case

2005 Hospices de Beaune Pommard Cuvée Dames de la Charité - France, Burgundy, Côte de Beaune, Pommard (11/12/2019)
Elevage by Bouchard.

This was decanted a little bit in advance, but still needed more time to get past a grumpy phase. It was a delicious match with the black cod with mushrooms entree. Initially it had a funky, cabbage-like aroma that covered up more interesting elements. On the palate the cabbage thing was not apparent, and the red fruit, dried leaf and earth, as well as some oak came through without a veil. The more time went on, the more the cabbage note dissipated, allowing the fruit and forest floor tones to come forward. It ultimately showed very well with the cheese course.

Interesting about that cabbage note dissipating over time. Do you know the cause? I often associate notes like that with wines that are breaking up but perhaps I'm wrong.

I had two out of six bottles of Haut-Bailly 1994 which went down the sink because of cabbage aromas veering towards drains :( .

I bet that this saw a little heat in its life, and is going to break up soon.
