I know I could go beer here, but would appreciate wine recs for a roasted pork loin dish served with a very hardy beer and mustard sauce (this is a reduced sauce is quite flavorful). Mashed potatoes, homemade applesauce and sauerkraut as sides.

Hmm, I like Riesling or Pinot Noir with pork but sauerkraut and beer/mustard sauce may overpower these varieties. Maybe a Tempranillo or Cotes du Rhone.

I think I'd like something with a tannic bite with this like Minervois or Cahors but I also think something like a Lagrein might pair well.

riesling would be great provided you cook the sauerkraut correctly - washed a couple of times and cooked with dry riesling and maybe a grated apple - some people like caraway seeds too; but...... it should have a mild flavor that won't hurt the wine. but a really intense gewurztraminer wouldn't hurt either.
