Champagne nose filling the room?

by Greg H » Wed Jan 16, 2008 9:39 pm

Whenever I open a bottle of champagne and pour a glass, the whole room seems to be perfumed with aromas of the champagne. I notice this much more with champagnes than with other wines. Is this because the effervescence carries volatile compounds to the surface of the wine and releases them into the air when the bubbles burst?

More likely it's because the contents of the bottle are under pressure, so when opened you get a sudden outrush from the headspace, including various volatile organics that you can smell.

Very good, Rahsaan.

I filled a whole wineshop cellar with the aroma of vintage Port, once. I threw a case down the stairs that turned out to have two bottles of Port in it.
