WTN: W. Schaefer Graacher Domprobst Kabinett 97

by Peter Ruhrberg » Mon Jun 02, 2008 6:08 am

The point of this note is really a question: how can a mature wine be appearently more refreshing than a young one? I don't quite know how, but this one is. I guess it is not news that 97s drink well now, and that Schaefer makes some of the most age worthy Kabinett around, and that this is real Kabinett. It's that slightly bitter (preserved?) lemon edge that makes this wine sooo refreshing, compared to the fruity young Kabinetts I tried from 07 recently. Which is not to say that 07 is not as good. It is better, I'm sure.

Thanks for the note. I still have 1 bottle of '97 Domprobst Kabinett in the cellar. Sounds like a good time to break it open.

While I have no doubt that 2007 has produced wines of excellent quality, there was something special about Willi's '97s.

Any recent experience with the 97 Prum WS kabinett?
