The point of this note is really a question: how can a mature wine be appearently more refreshing than a young one? I don't quite know how, but this one is. I guess it is not news that 97s drink well now, and that Schaefer makes some of the most age worthy Kabinett around, and that this is real Kabinett. It's that slightly bitter (preserved?) lemon edge that makes this wine sooo refreshing, compared to the fruity young Kabinetts I tried from 07 recently. Which is not to say that 07 is not as good. It is better, I'm sure.
