Another warm and lazy day here. A piece of salmon on the grill; thick, white, German asparagus, new potatoes and a lime and lemon butter was our dinner and after another dive into my cellar I came up with a 1997 Chablis Premier Cru Montée de Tonnerre by J-M Brocard.
Very nice, mature nose with the typical Chablis gunsmoke and flint plus quite a lot of seashore and seafood, in a nice way. Intense, peppery attack and a mothwatering acidity. Then the taste fades away a bit, making the mid-palate slightly hollow, but gaining intensity again towards the end. Finishing with the return of the pepperiness and the seashore plus a nice bitterness giving it structure. Excellent to the salmon and also to sip after the dinner. Might have been slightly better a couple of years ago, but in no way over the hill yet. A very pleasant experience, as was the Les Clos from the same vintage and producer, tasted some months ago.
