WTN: Champagne and Chinese food

Last night a few SOBER folks and SOs had a dinner at our favorite Chinese (Cantonese) place, CentralSeafood in Hartsdale. Jackson arranged a great assortment of dishes- whole shrimp in shoyu (headsucking shrimp!), jalapeno stuffed shrimp, a couple of types of dumplings, fish and squash soup, fried lobster and crab, beef w/peppers, crispy garlic chicken, whole fish with scallions and ginger, and probably something I forgot. Betsy and I loved the food. This is our traditional Champagne dinner, and we had a stellar lineup.

NV Billecart Salmon Rosé Champagne
One of my offerings. Generally my favorite NV rosé, showed fine tonight, but overshadowed by its tablemates. Strawberries with a little blood orange and tangerine, big biscuit note handing out there. On another night I probably would rate higher, but I always say I am not consistent, and on this high competition night it gets a B/B+

1996 Deutz "Cuvée William Deutz" Rosé Champagne
So pale I had to doublecheck it was rose. But pale doesn't translate to lack of flavor. Red berries and mineral, long and tasty. Fairly delicate mousse. This got better and better through night. A-

1998 Billecart Salmon "Cuvée Nicolas François Billecart" Champagne
My other wine. Very yeasty, with moderate mousse and high acids. This really seems to need some time. I do enjoy the flavors though- apple pie and lemon curd, some mineral on finish. Promising, but for now B+

1985 Pol Roger "Cuvee Winston Churchill" Champagne
Boy, the Champagne version of iron fist in velvet glove. You can feel power, but this is at the same time light, elegant, and delicate. Apple turnovers and spice, an almost smoky note, long and lingering finish. I'd call this a pointe for my tastes. Great bubbly. A

Fun night, fun people, fun food, fun wines.

Grade disclaimer: I'm a very easy grader, basically A is an excellent wine, B a good wine, C mediocre. Anything below C means I wouldn't drink at a party where it was only choice. Furthermore, I offer no promises of objectivity, accuracy, and certainly not of consistency.

'85 PR WC is one of my all-time favorite Champagnes (from my all-time favorite vintage). Sadly mine are all gone. :(

It's just gone 1.00 am, Wednesday over here and I'm salivating about that '85 Pol ..... one of my favourite producer's and from an excellent year. The reason I'm up so late - my vertigo has improved dramatically in the last few hours and for the first time in 19 days I have gone a several hours without the walls, ceiling, roof and everything else around me moving without my permission. Thank @#$% for that! The next challenge is when I try and get up will it still be there to haunt me? I just got up and, yep, I'm off in my galvanised steel tub on a two metre swell again ... rats! :lol:

I've got a fair few tucked away James ...... oh well such are the vagaries of distance and "higher class" .... :roll: :wink:

David B, this wasn't mine, but I have one '85 Champagne (Heisdick Cuvee Charlie) if you come this way soon.
James, I've always depended on the kindness of strangers (or friends).
David L, sorry to hear about the vertigo. A friend had a bad bout last year. Truly debillitating (a jazz drummer,so working from home wasn't option). His just seemed to go away, hope yours does too (soon). Will think the good thoughts for you!
