So what are some wine that age well?

I mean drink in 2025?

2001 Cabernet Napa.

2005 Burgundy.

Lots of different Bordeux

Just looking for ideas. Looking to diversify the fridge.

That is the year my girls turn 21, so I have been and will be cellaring things like 2004 Barolo for them. Lots of sweet wines or off-dry Rieslings will age for the long haul and I think you can age a lot of 4+ puttonyos Tokaji forever. Port is an obvious option, too, though I am not the best at recommending vintages there.
