All the recent talk about Cal Cab and steak got me salivating.
So last night we popped a 2002 Tobin James, Silver Reserve, Paso Robles, Cabernet Sauvignon ($38 U.S). Alcohol level is 14.3%. Age wise, it was good to go; with little more potential likely.
Having said that, it was a great wine! It gave a strong dose of red and black fruit on the nose and upfront. There was more concentration of fruit in the earthy complexity in the middle, along with perfectly smooth tannin. The finish lingered and lingered. It was not overly jammy as some of TJ wines are wont.
We matched it with a grillpanned 2” thick boneless sirloin rubbed with EVOO and Morton rub, accompanied by our home constructed succotash. It all added up to a truly memorable meal.
