Pol Roger Brut 1998
(Without food, then with pizza, with which it went OK.)
The nose showed brioche, lemon sherbet, baked filo pastry, even a touch of butterscotch. There’s a lot here and it’s almost a disservice to the wine to pick out components.
The palate had a noticeable perfumed character like honey/honeysuckle for me, with a gentle nuttiness too. It was full in the mouth (maybe a fairly high dosage, though that fits well here if so) and pleasant mousse that’s not too big or explosive.
It's wonderfully integrated and balanced and has complexity to a near-elusiveness degree. I have consistently enjoyed it (including blind) each time I've had it. A very complete wine and well worth the money IMO.

I would, but 6 am (or thereabouts) on a Monday is just not a convenient time for me.
