WTN: My First 2005 Bordeaux

I opened this with pan-fried wild rabbit and unfortunately did not let it breath. The 2005 Ch. Pipeau needed at least 6 hours to breath as it seemed tight and a bit astringent. Very dark purple in the glass with aromas of plum and a bit of coffee, the flavors followed and are smoothing out now as I write, 1.5 hrs. after opening. This medium bodied wine has very good potential but I will let the rest of my bottles rest for a year or two or let them breath extensively.

I would wait more than a year or two. Every 2005 I have tried (except some real cheapies) has been years from being enjoyable to drink.

i agree - maybe start opening in 2015 just to see how they are doing.
