*Sigh* I wish that I could read popular reporting on science without internally groaning. So the magic of bacon is the reaction of amino acids with the reducing sugars in the fat? Only two problems: 1. Fat ≠ sugar and sugars aren't soluble in fat. 2. That reaction, known as the Maillard reaction, is responsible for the browning of bread and French fries and caramelization. It occurs whenever a mixture of protein and carboxhydrates (sugars) is heated and is certainly not unique to bacon. No, the reason for bacon's appeal is the magic combination of smoke, fat and salt. Yummm.
