The End of Western Civilization As We Know It...Chapter 3

by TomHill » Fri May 05, 2017 11:27 am

Interesting article in today's SFChron by EstherMobley on
a "wnry" by the name of Ava who is creating a synthetic "wine", wine that has never seen a grape:
SFChron:SyntheticWine

I can hardly wait to get my hands on a btl to put up the first TN....not.

At least we'll be able to say we've been following it since the very start.

It's interesting, isn't it, that their initial offering is a profoundly unfashionable, undervalued grape, admittedly one that is seeing a resurgence of late. Don't get me wrong, I love a good muscat (especially from Alsace), but 100+ grams of sugar? If you were going to target something, why not Champagne? Though they are working on pinot and cab, which is probably in the right direction. Heck, I would try any of the $$$$ bottles just for curiosity, even if it wasn't a style I would like, and I'd certainly spend $20 on a clone. It seems like an interesting approach, and I find the post analogy apt. The paintings in the Musee d'Orsay are spectacular, and a poster is no substitute for seeing them in person, but it's also a very nice thing to hang on your wall.
