Red sauce Italian food at the Bueker household calls for Idlewild 'The Bird.' A couple of years of cellar time has calmed this blend down a bit. The Dolcetto tannins had backed off, while the wine retained much of its original freshness. Red fruit and warm herbs made for a spot on match with the food. If there is a go-to red in my cellar, this is it.
