- NV Pierre Gerbais Champagne Grains de Celles Extra Brut - France, Champagne (1/12/2025)
Interesting blend to this wine, with 50% Pinot Noir, and then 25% each of Chardonnay and Pinot Blanc! Just a touch of dosage at 3 g/l, which is enough to impart an extra degree of palate richness, and not so much to create an actual impression of sweetness. Nicely judged IMO. Disgorgement in November 2022.
The aromatics are apples and yeast, and there’s good palate depth, and a bit of roundness/richness on the finish, making it a pleasant sip on its own.
The fireworks happened when we had it with the Gougeres. Having a bit of the cheesy puffs and then a sip of the Champagne amplified the wine, and doing the opposite order amplified the Gougeres. Both my wife and I noted the same thing, and it kept happening through the entire bottle of Champagne and all the Gougeres. It was a true 1+1=3 match.
Have to do that again soon!

Wine sounds great, gougeres sounds even better (I'm on a diet)
