- NV Vilmart & Cie Champagne Premier Cru Cuvée Rubis - France, Champagne, Champagne Premier Cru (4/6/2025)
Consumed over two nights this was fresh as a daisy despite being disgorged nearly seven years ago. Strawberries and wheat toast aromas, and persistent and fresh strawberry fruit on the palate, it was just a joy with our ham dinner, as well as on its own. Glad to have more of this disgorgement, and will not be remotely worried about drinking them up any time soon.

Vilmart is one of our favorite producers, and the Rubis IME never disappoints. The only problem we have is keeping our hands off them, so we rarely drink an aged example. Your bottle sounds absolutely delicious, David.

Also a Vilmart fan, Rubis is generally consumed within months (or weeks) of purchase. Good to know can age though (in theory).

Been there, done that. That's how I ended up with 7 bottles of the 2007 Chandon de Briailles P-V Ile des Vergelesses.
