WTN: Sauvignon from Burgundy

Saint-Bris is a small island of Sauvignon in northern Burgundy surrounded by a sea of Chardonnay. It is not far from Chablis and this producer also offers generic Chablis and a 1er cru in her range. In a previous post I commended SB's ability to pair well with pungent fish dishes. This particular Saint-Bris was more restrained and refined than most from the grape and did not fit that bill so well.

2021 Clotilde Davenne Saint-Bris Vieilles Vignes - France, Burgundy, Côtes d'Auxerre, Saint-Bris (18/04/2025)
I found Davenne's entry level Saint-Bris of 2022 rather bland but this VV from 2021 has a lot more complexity and depth. Not bone dry, its fruit had a dessert grape touch which I don't recall before in SB as well as some restrained but more typical grapefruit towards the finish which added support. There were also fine minerals, underlying roundness and discreetly fresh acidity. The overall character was more restrained and elegant than I recalled from a sip and spit at an exhibition and it had some difficulty in standing up to some quite strong herbs garnishing monkfish which a more conventional SB would have taken in its stride. But good.

Yes, these are the nuances and the moving-target aspect of wines that generate the magical uncertainty of each cork you pop.

But sounds like it still gave you a nice dining experience.

Some friends and I visited Davenne last spring, I also found the entry level Saint-Bris (I think 2022) boring. But my favorite wine of the visit was a 2012 St Bris VV (from mag), Thanks for note
