NV Charles Heidsieck Special Edition Rose (2019 disgorgement)
This is all 2005. Base, lots of life left. (apparently it’s actually the 2005 vintage that they didn’t release as 2004 and 2006 were in pipeline). Cherry, citrus and rhubarb, caraway seed, baked bread. Elegant mousse, tangy. B+/A-
Thai grilled skirt, caprese, carrots, Mei Mei kale salad
2010 Domaine Drouhin Oregon Pinot Noir
Fully mature, good acids, red cherries and truffles, very tasty but not super long and I get the feeling it going to begin a gentle slide. But for now B/B+
Wednesday Eric Kim’s shrimp stew (gochugaru, radish, bok choy) with rice, wine was the 2004 Selbach-Oster Zeltinger Schlossberg Riesling Spatlese. This was from recently discovered box that has been standing up for years,m but cork comes out solid and there’s no sign of oxygen damage. On sweeter end of Spatlese, big, but there’s a firm acidic backbone. Rather exotic fruit profile of white cherry and pineapple, with some wet stones and a light hint of petrol on finish. Creamy texture, quite inviting. B+/A-
