WTN: white Burg, Nahe Riesling, and Cali Mouvedre

Oysters, followed by roast salmon with smashed olives,
2023 Servin Montee de Tonnerre Chablis 1er
I should drink more Servin! Racy acids, limestone and oyster shell, lemony citrus and citrus blossoms. Long, full, crisp, and racy. A-

2022 Extradimensional Yeah! Ancient Groove
Bottle was recycled already, mostly Mouvedre with something else, memory says Carignan but can't swear. Redder fruit than I usually expect from Mouvedre, cranberry and raspberry with spice and herbs Tangy, crunchy, fun. I think I’ve yet to find a Hardy wine I don’t like (but think I have an orange wine in queue). B+/B

Scallops with Brussels sprouts, plus spinach and a fun soba salad
2021 Domaine Nudant- Bourgogne Hautes Cotes de Nuits Blanc
I’ve thought this fresh and a good value, but this bottle seems muted and dull. Modest acids, heavy peach fruit, not so long. I keep sniffing for TCA but don’t find. A mystery. B-/C+

A very fun dinner of pork and cabbage with fish sauce butter and lime, rice
2020 Emrich-Schonleber Halgans Riesling Trocken
Now this has zip! I think of 2020 as a ripe vintage, but this is an acid monster. Almost too much even for me at first, but after first shock I really like this minerally intense dry Riesling. Apple blossom, lime, tangy and long. B+/A-

Grade disclaimer: I'm a very easy grader, basically A is an excellent wine, B a good wine, C drinkable. Anything below C means I wouldn't drink at a party where it was only choice. Furthermore, I offer no promises of objectivity, accuracy, and certainly not of consistency.

I get a lot of offers for Servin, but I have yet to bite. Sounds like it might be worth a go.

Yes to both. I love Servin, and agree that Hardy has a magic touch with red blends.
