WTN: Probst Master

  • 2015 Willi Schaefer Graacher Domprobst Riesling Kabinett #3 - Germany, Mosel Saar Ruwer (12/29/2025)
    Served with home made Thai-style fried rice, this was a fine dinner companion, and an equally fine after dinner drink. Ripe flavors tended to the peachy, as well as uber-ripe apple, were underscored with good mineral tension, and solid if moderate acidity. Most importantly it tastes like a Willi Schaefer wine, which takes me back to the early 1990s when I first started really exploring German Riesling.

both that wine and the Thai-style fried rice sound excellent. I'm reminded that I don't have enough Schaefer in the cellar (and certainly far too little of his Kabinett)

For me, Schaefer's Kabinetts are where it's at. I still have a few in the cellar which I might have to lug to NY the next time I'm out.

Thanks, have several of these, Agree with Mark about kabs. If Mark comes to NY, I have plenty 2011 and more recent, CT shows a couple older bottles if I can find. Of course if Mark comes to NYC that's about the 6th vertical we've talked about
I agree with Willi S as a go to, with the caveat that we mean Graacher and even more so Domprobst. In earlier days I bought a lot of Willi WS (great vineyard, great winemaler) and while always good they have been seldom great.

Hmmm... I've got the '11 Gracher #3. I see some possibilities here.
