1995 Dr. von Bassermann-Jordan Deidesheimer Hohenmorgen Riesling Spätlese - German wines are the worst for being able to post notes - longest names in winedom! Spatlesen are my 'sweet spot' for German wines. Many auslese are too sweet in proportion to the acidity levels, although Sauternes fanciers have no problem with that.

This wine was a deep golden colour and had a typical Riesling nose, accentuating something like alfalfa honey - slight grassiness combined with not too much sweetness. In the mouth it was only mildly sweet with adequate acidity to avoid any flabiness that you sometimes get in older Rieslings. Well made and enjoyable, but sadly just a singleton bottle in the cellar. Bonus was that in looking for this, I came across a 375 ml bottle of a 1989 Riesling Beerenauslese that I forgotten about

Yeah, I think that Spätlesen, at least those with traditional levels of dry weight, are the highest Pradikät wines that still pair well with food. Of course you can pair Auslesen and above with strong cheese, etc., but not really with savory entrees, at least IMO.

As always, depends on the Auslese.

But I would probably agree that it requires special care in selection/lots of aging. Not sure how widespread David's auslese/savory pairings are.
