November 2020 disgorgement.
Opened to pair with aged Gouda gougeres, and it was on point. Showed a little severe on its own at first, but it was more expressive after 30 minutes, and totally blossomed with the gougeres, as it showed more fruit, more mid-palate depth, and then a vibrant, lemon zest finish. Delicious now, and I wish I had more.
