When first opened this was good, but perhaps a touch austere. When we paired it with the aged Gouda Gougeres it took off like a rocketship. The fruit blossomed, the mid-palate levitated, and it was a +2 match where both the wine and the food tasted better together. Not sure how the Gougeres managed to make the wine lighter and even fresher but they did. Clearly I need to duplicate this experiment to ensure consistent results!
